Healthy Chicken Recipe

I will begin my post with an apology to my vegetarian readers. Sorry but I do promise to put up a recipe we can all eat next time. The thing is since my thirtieth birthday I realised changes in my life were in order. Working out and food being the most important. Till date I have eaten pretty much anything and everything whenever I wanted and the last time I went to gym was two years ago. So this is when I started  exercising regularly and eating healthy. Now I do love alcohol so thats still in my diet chart but narrowed down to red wine, vodka tonic and gin and tonic (with lime of course – cocktail recipes are all on the blog as well).

Grill chicken with mash and vegetables

I don’t have a fancy oven in my house nor do I have the time for much fancy cooking. What I can give you is a home recipe for a tasty healthy chicken dish that is not only easy to make and good to eat but also very simple.

Ingredients :

  • 2 pieces of boneless chicken breast
  • 1 tablespoon olive-oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon rosemary
  • 1 teaspoon basil
  • 1 teaspoon thyme
  • 1/2 teaspoon mixed herbs
  • 1 teaspoon oregano and paprika
  • salt according to taste
  • fresh black pepper
  • 3 small garlic chopped

Mix these together in a bowl. Marinate the chicken with the mix.

Marinated chicken breast

The chicken should be kept for an hour in the marinade. If you want it kept longer make sure its put in the fridge. Make small incisions in the pieces, this helps in flavour. Take a pan and put it on low flame. When ready, one by one put the chicken breasts on the pan, no extra oil is required. Cover the pan with the lid and after approximately 7 mins turn the chicken and cover the lid again. I like my food well done so I would keep it for total at least 20 mins and to judge you can always make a small cut to see if its cooked through.

Eating the same thing can get boring so you can always eat the chicken with different sauces, mash, stir fry vegetables, or even caramelised apples – something that Akshay made me try.

My favourite sauce is a creamy mushroom sauce and it goes perfectly with the chicken. For this you will require the left over marinade from the chicken.

Ingredients:

  • 1/2 cup milk
  • leftover chicken marinade
  • half an onion sliced
  • 6 mushrooms chopped
  • 2 cheddar cheese slices

Once the chicken is done and plated, on the same pan the rest of the marinade should be stir fried along with the onions and mushrooms. The milk should then be poured and stirred in.  Cheese should be added and stirred in continuously till it melts in.

    I don’t eat meat, but I’d love to try that sauce over a veggie option! It looks delicious.

      I didn’t know you didn’t eat meat Corinne! If you want to try I would suggest some Indian dish because then the taste of the meat is not so direct.
